During the last week of every year, lightly peated barley is used in whisky production here at the Tomatin Distillery. This spirit, just 90,000 litres per annum is then filled into 1st fill ex-Bourbon, ex-Sherry and Virgin Oak casks and, when matured, will be bottled as Cù Bòcan.
Nose: Light, sweet and smoky. Dried fruits, raisins and sultanas with a slightly floral background. Hints of roasted nuts. With spicy, citrus notes.
Palate: Citrus and oats, the peat becoming more prominent here. Nutty, toasted almonds dusted with cloves and cinnamon, a spicy kick.
Finish: Medium and dry, slightly smoky with a bitter malt.
