Tasting profile

The character of Imperial Caviar

Imperial caviar comes from a hybrid of the Amur and Kaluga sturgeon (Acipenser schrenckii × Huso dauricus). Beautifully formed pearls of 3.1 mm and above, brown to golden in colour, bring refined salinity, a buttery, nutty character and a clean finish.

Malossol cured with under 4% salt. Balanced and elegant, it suits a special occasion, a dinner party or a luxury gift.

How to serve

A small ritual Four steps to serving caviar well

  1. 01 Keep it cold

Serve the tin over crushed ice so it stays cold at the table.

  2. 02 Open just before serving

Lift the lid at the last moment so the pearls stay firm and glossy.

  3. 03 Use a non-metal spoon

Mother of pearl, bone or wood. Metal can leave a taste on delicate pearls.

  4. 04 Serve it simply

On a warm blini with a little crème fraîche, or straight from the back of the hand, the way tasters try it.

What to drink with caviar

Caviar likes a clean, cold glass. Keep the drink lighter than the pearls.

  • Whisky

Choose a lighter style, such as a delicate Japanese single malt or a coastal Scotch with a little sea air. Big sherry casks can overpower the pearls.

  • Vodka

The classic partner. Ice-cold and clean, it resets the palate between spoonfuls.

  • Champagne

A dry Brut or Blanc de Blancs. The bubbles and acidity cut through the richness.

Sourcing

Where our caviar comes from

Our specialist partner imports directly from accredited aquaculture farms across Europe and Asia, with no brokers in between. Every batch is traceable from egg to tin.

  1. Direct from the farm

Farmed sturgeon raised to EU or equivalent food safety standards. A beluga sturgeon can take up to 20 years to mature.

  2. Graded by hand

Minimum pearl sizes are enforced, and colour and texture are checked by hand for every tin.

  3. Packed in London

Our specialist caviar team holds a Food Standards Agency hygiene rating of 5 (inspected June 2026), is SALSA accredited and keeps CITES documents for every batch.
