About Caol Ila

Caol Ila Distillery

Caol Ila Distillery is one of the most important and recognisable producers of Islay single malt Scotch whisky, located on the rugged east coast of the Isle of Islay, Scotland. Known for its elegant, smoky, and coastal style, Caol Ila produces a lighter, more refined peat profile compared to some of its Islay neighbours.

Location

Caol Ila sits near Port Askaig, overlooking the Sound of Islay, with views across to the Isle of Jura. Its coastal location plays a key role in the whisky’s maritime character.

History

Founded: 1846

Founded by Hector Henderson

Rebuilt and modernised in the 1970s

Owned by Diageo

Caol Ila is one of the largest distilleries on Islay and produces a significant volume of whisky, much of which is used in blends such as Johnnie Walker.

Whisky Style

Caol Ila is known for a clean, balanced Islay style, typically featuring:

Light to medium peat smoke

Fresh citrus and green apple

Sweet malt and vanilla

Coastal salinity and sea air

Gentle spice and pepper

Compared to heavier Islay whiskies (like Laphroaig or Ardbeg), Caol Ila is often described as more approachable and elegant, while still delivering classic Islay smoke.

Production

Key features of Caol Ila’s production:

Large copper pot stills producing a lighter spirit

Use of peated barley (typically around 30–35 ppm)

Long fermentation for added fruitiness

Maturation primarily in ex-bourbon oak casks

Occasional unpeated runs for blending

Popular Caol Ila Whisky Expressions

Caol Ila 12 Year Old – flagship expression, balanced and smoky

Caol Ila 18 Year Old – more refined with added depth and sweetness

Caol Ila Distillers Edition – finished in Moscatel wine casks

Independent Bottlings – often cask strength and highly sought-after

Interesting Fact

Despite being a major producer of peated whisky, Caol Ila also produces unpeated spirit for a few weeks each year, which is primarily used in blends.
