About Hikari Shuzo Distillery

Hikari Shuzo Distillery

Founded in 1912, originally as Mitsuyasu Sake Brewery Co., Ltd. on Kyushu, the company shifted from sake to shōchū production. Today, the distillery is located in Fukuoka, near Hakata Station, and produces both shōchū and whisky under the Hakata brand.
Their whisky uses 100% barley mash, fermented with koji instead of malted barley—an approach that enhances umami and gives the spirit its unique flavor profile
Hakata Whisky | Fukuoka Japan. The whisky is aged in used sherry casks, stored both in traditional indoor warehouses and open-air environments—leading to rich sherry, umami depth, and complex texture. Hakata whiskies are celebrated for their bold flavors and savory umami; Whisky Advocate has consistently scored them 90+.
