Established in 2016/2017 by brothers Simon and Philip (Phil) Thompson, the distillery is located on the grounds of the Dornoch Castle Hotel, having converted an old firehouse into its tiny operation. The Thompson brothers aimed to revive traditional whisky styles, using heritage barley, long fermentation (7+ days), and slow, traditional distillation techniques to create a complex, fruity, robust spirit reminiscent of pre-1960s single malts. The distillery also employs energy-saving technology like heat exchange systems to reuse distillation heat, improving efficiency.
